B i r y a n i

(2-4 portions)

  • 2 cups rice
  • 2 cups water
  • 3 tbsp. oil or 30g margarin
  • 1 tsp. salt
  • 150g meat
  • 30g raisins
  • 40g almonds
  • 2 tsp. allspicel
  • 1/2 tsp. black pepper
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cardamom

Rince the rice and leave it in water for 30 minutes. Blanch the almonds. Heat the oil or the margarine in a pot. Cut the meat into cubes and fry them in the pot. Add water and bring it to boil. Add the rice and the other ingredients. Let it boil for ca 5 minutes until the water is absorbed. Stir a few times. Reduce heat very low, cover the pot and leave it to cook for ca 20 minutes.
